Sweet Corn and Tomato Ceviche

Every Friday, for the last couple of months, I’ve catered lunch for Drumlin Farm staff and guests. Each week I cook on a whim using what’s available in the farm kitchen and most importantly, being inspired by the seasonal produce picked fresh from the farm that day. Trust me, it doesn't get any tastier than fresh farm produce!

Together, Drumlin Farm and I have decided to extend our weekly recipes and share them with you as I feature a recipe in line with what’s in season and plentiful in the Drumlin Farm CSA box.

This week it’s all about the heritage tomato. Drumlin Farm has quite a few varieties including Amana Orange, Amish Paste, Beefsteak and Brandywine.

I’m happy to share with you a recipe that is similar to what we’ll be offering at this years Taste of Guelph: Sweet Corn and Tomato Ceviche.

Did You Know: you can extend the season into next by coring the tops off the tomatoes and storing the tomatoes in a freezer bag for easy sauce in the winter.
