A few weeks ago...
I was asked to cater a two-day leadership retreat for 20 grade nine students and 10 retreat leaders. Excited to connect with youth through food we jumped at the opportunity cater this retreat at Blue Springs Scout Reserve in Acton, Ontario.
It was so cool to hear what teenagers consider gourmet food!
Day 1: We served homemade pizzas at lunch and soft corn tortillas with roasted chicken for dinner. At break, they cooled off with our homemade coconut and tropical fruit popsicles. The homerun of desserts were the homemade baked donuts with strawberries and vanilla ice cream.
Day 2: As the youth arrived the next morning for breakfast, the scent of baked banana and blueberry oatmeal was looming in the dining room. We served the baked goodness along with individual crust less quiche and orange slices.
After satisfying their morning hunger we had a few hours to prepare a lunch that slams Subway out of the ballpark! We set-up a self-serve deli counter with oven roasted meats, whole grain kaisers, roasted veggies, homemade guacamole and Alba Lisa sauces. The home-crowd was pleased.
Needless to say, catering this youth leadership retreat reminded us about the hungry appetite of teenagers! Watch out pizza lady, your pizzas will be gone in seconds flat!
At the end of the retreat, it was such a delight to hear the cheers from the dining hall as the youth exclaimed our catering as one of the best parts of their retreat experience.
